If anyone knows me they know that sweet potatoes are probably one of my favorite foods. I eat them on the regular! It’s a good thing because they are so filling and also very heathy.
Sweet Potatoes are packed with fiber, and antioxidants. Purple sweet potatoes are also amazing if you can find them. They are also so versatile and can be made into so many different recipes and dishes. I air fried these beautiful potatoes and paired them with a nice fresh crisp salad.
Air- Fried Sweet Potatoes
3-4 Medium Sized Sweet Potatoes
1/4 cup Olive Oil
Salt and Pepper to taste
Method
For this quick dish here I peeled and cut up sweet potatoes into bit size pieces and toasted in olive oil. I then roasted in my air fryer at 350 degrees for 15 minutes. About half way through 7-8 minutes you will need to flip the potatoes over. Remove from the air fryer and toss in salt and pepper to taste and serve immediately.
Arugula and Spinach Salad
8 Ounces Arugula and Spinach mix
2 Fully Ripe Tomatoes
2/3 Cup Olive Oil
1/4 Cup Squeezed lemon Juice
1/2 Teaspoon Salt
1/4 Cup Balsamic Vinegar
Method
Dice tomatoes into small pieces. In a separate bowl mix together lemon juice, olive oil, salt and vinegar to make the dressing. Toss into the salad and I chose to sprinkled some vegan granola on top for additional crunch.
