Vegan Blueberry Pancakes

These Blueberry Pancakes were so good! I actually added blueberries into the recipe which made them even better. If your looking for an easy to make vegan blueberry pancake recipe. This is it!

Ingredients List

1.5 Cups Flour

1 Tbsp Baking Powder

1.5 Cups Almond Milk

1/2 Cup Vegan Butter

1 Cup Blueberries

1/4 teaspoon Salt

2 Tbsp Sugar

1 teapoon apple cider vinegar

 

Instructions.

  • In a Bowl Mix together the Flour, Baking Powder, Salt and Sugar.
  • In a separate bowl mix the Almond Milk, Vegan Butter, and Apple Cider Vinegar. You will then mix then into the dry ingredients ( First Bowl)
  • Heat up your stovetop or griddle to a medium setting and spray the griddle or pan with nonstick spray. You don’t want your pancakes to stick to the surface.
  • You can then measure and pour out about 1/2 cup of the batter for one pancake. It doesn’t have to be exactly have a cup!
  • Immediately after you pour the mix onto the griddle place about 1/4 cup of your blueberries onto the pancake. You should do this while the pancake is still in the process of cooking for best results.
  • Once the batter starts bubbling up and crisping on the outside that is when the pancake is ready to be flipped. Let the other side of the pancake cook until golden brown.
  • Repeat until you are finished with the batter.
  • Add extra blueberries and syrup on top to taste!
