Vegan Sweet Potato Cookies

I make batches of these cookies all the time and grab them when I’m on the go for breakfast. They are super easy and quick to make, plus healthy and dairy free & minimally processed!

Sweet Potato Oatmeal Cookies 

Ingredients: 

1 Cup Oats

1 Large Sweet Potato

2 Tablespoons Peanut Butter or any Nut Butter

1/4 Cup Plant Based Milk

1/4 Cup Maple Syrup

¼ tsp Vanilla Extract

¼ tsp Cinnamon

Optional 1/4 cup of crushed  mixed nuts

Directions

Bake the sweet potato in the oven at 400 degrees for 30-40 minutes until completely cooked and soft. Peel the potato and mash until a thick and creamy consistency. Mix with the plant based milk, crushed nuts, nut butter, vanilla, oats, maple syrup, and cinnamon.  Mix until well combined.

Spoon out the mixture into small quarter sized balls on a baking tray, make sure that none of the cookies are touching and then flatten out the cookies using a spoon or your hands.

Bake for 15 minutes at 350 degrees. Let cool completely and enjoy!
