Vegan Tacos

This taco recipe is one of my favorites. Even non Vegans enjoy it. Its bright and colorful and easy make.  I’ve found that Mexican food is very easy to make vegan or vegetarian because you can add a variety of beans and different vegetable toppings!

 

Vegan Beef Tacos

Flour Tortilla Shells

Vegan Ground Beef ( you can choose any brand you prefer)

1/4 Vegetable Oil

1 copped red onion

1  Cup of Lettuce Mix

2 15 oz cans of Black Beans

1 Cup Salsa

1 Packet Taco Seasoning

1-2 Limes (optional)

5-10 Cherry Tomatoes

 

Method.

  1. Begin by heating up your pan and heat oil in the pan.
  2. Then in a separate bowl mix the vegan ground beef and taco seasoning.
  3. Finely Chop up the onions and add them to the pan allow them to sauté until golden brown. You can then add the seasoned ground beef to the pan and allow the meat to cook 5-7 minutes until golden brown as well.
  4. You can then ensemble the tacos, spooning out the meat onto the shells then add the tomatoes, salsa, beans, lettuce and lime to your preferences.

Enjoy immediately! You can store leftovers for in the fridge for about 2 days or freeze the leftover ingredients as well.
